Description

This recipe is near and dear to CaJohn’s heart. It is one of his very first recipes, and has been awarded many 1st place awards including the “World Champion” Louisiana Style Hot Sauce as judged by the culinary professionals assembled in Lafayette, LA in 2013.

It is CaJohn’s take on a century old recipe, gifted by an old Cajun friend, Rush Biossat of Maurepas, Louisiana back in 1997 at the Crescent City Brewhouse on Decatur Street in New Orleans.

Ingredients: Distilled Vinegar, Chile Peppers, Sugar, Salt, Garlic, Lemon Extract, Xanthan Gum (natural thickener).

    Its a good as a habenero sauce gets. I need some heat, so you gotta bring a strong pepper to the table. The habenero is in a perfect range to play with, but its simply not the most flavorful profile to make a well versitile sauce with. It’s citrosy flavor really hampers its range. The garlic helps here, but I personally prefer to use a haberno for the heat, but other peppers for the flavor. But as sauces go, where the habenero is the only pepper involved, this is as good as it gets.
