Jerk Seasoning Extract provides the complex jerk character (allspice, thyme, Scotch Bonnet) without the need for multiple individual spice ingredients. Tomato paste gives it a thick BBQ base, molasses and cane sugar add layered sweetness, caramel colour gives it the characteristic dark appearance, and modified food starch provides the coating consistency. Potassium sorbate preserves freshness.
