Mapachtli was born in Mexico in 2015 as a 100% fair-trade company committed to empowering Mexican farm workers and preserving traditional ingredients. This is their salsa macha — Mexico’s answer to chilli crisp, an oil-based condiment from the Veracruz tradition made from dried chillies fried in oil with nuts and seeds. Three different dried chillies bring three different characters: De Arbol for clean, intense heat; Ancho for its sweet, earthy, chocolatey depth; and Morita (the smaller, fruitier variety of chipotle, smoked over oak) for a warm, rounded smokiness.

Roasted peanuts add rich, creamy texture and nutty depth, sesame seeds add toasty warmth, garlic and olive oil round out the base. Drizzle over pizza, pasta, eggs, seafood, stir-fries, and vegetables, or serve with a food platter of cheese, bread, and crackers. Stir well before serving. Refrigerate after opening.
