Mapachtli was born in Mexico in 2015 as a fair-trade company committed to empowering Mexican farm workers and preserving traditional ingredients. This sauce is a salsa macha — a traditional Mexican condiment made from dried chillies, oil, and other ingredients — reimagined with figs and piloncillo for a product that’s genuinely unlike anything else in the hot sauce world.

Morita chillies (the smaller, fruitier variety of chipotle, smoked over oak) provide a deep, smoky heat with fruity undertones. Piloncillo (Mexican unrefined cane sugar) adds earthy sweetness that figs amplify with their jammy, honeyed depth. Cane vinegar provides acidity, garlic adds savour.
